Thai Iced Tea (Cha Yen)
Thai iced tea is made by putting together strong tea (using tea powder from Thailand), sweet condensed milk, and Coffee-mate.
We normally make 10 gallons at a time using big pot. However, for readers who may interested in making this tea at home, we have reduced the portion accordingly.
Ingredients:
About 3 ounces of Thai tea powder
About 2 cups of water
1 cup of Coffee-mate
1 and one-half cups of sweet condensed milk
Method:
Bring the water to a boil in a large saucepan. Add the tea and remove the pan from heat. Stir to submerge all the tea leaves in the water. Steep for about 5 minutes. Pour the brew through a coffee filter or a fine-mesh strainer into a large pitcher. Add condensed milk and Coffee-mate. Stir together well and serve in a tall glass full of ice. This could serve about 4 to 6 glasses.
The sweetness can be adjusted to each person’s preference by either adding or reducing condensed milk.
